3 cups sugar 1 cup evaporated milk
1/8 teaspoon baking soda 1 teaspoon vanilla 1/4 stick butter (One
stick butter is one half cup! ) 1 cup chopped pecans (optional)
Heat 2 cups of sugar with milk in a saucepan, just enough to
warm. Melt remaining sugar in a heavy fry pan (cast iron works best) over low heat; do
not stir.
Pour slowly into the warm milk
mixture. Turn heat to medium; stir constantly until all sugar
crystals melt. Cook to soft ball stage; remove from heat.
Add soda, vanilla, and butter; beat until cool.
Add pecans. Pour into buttered pan. Cut into squares.
Pecans are optional, and recipe can be doubled
easily, but keep in mind there's a lot more stirring for a lot longer
time if you do double it.
